360° quality control
The excellent quality milk used to make cheese at the Manciano Cheesemaking Factory is guaranteed by an internal analysis laboratory, performing hygienic quality controls throughout the production process. The controls also go beyond the Manciano Cheesemaking Factory and often involve the sheep herds of the breeders, for a 360-degrees guarantee on the raw material and final product. It was decided in the early years of the cheesemaking factory to pay for the milk based on its quality, in order to encourage farmers to produce more and better quality milk.
Milk quality is guarenteed by the constant periodic tests carried out every year on the milk, for a total of about 6,000 tests per year. Above all, they’re analyzed in addition to chemical parameters, such as fat and protein content, even microbiological ones as well as the total bacterial load, which provides information on the hygienic breeding conditions and the somatic cell count, an index of the animal health status.
