Tuscan-eating and talking sheep. They are the key players in the ‘Stilnovo, sustainability and innovative technologies for the sheep milk sector’ project, which combines sheep milk quality improvement with environmental sustainability through product and process innovations. It aims to combine several subjects and makes use of the scientific contribution of the Sant’Anna High School of Pisa, the University of Pisa and the University of Florence to enhance a territory and its production of excellence of tradition and passion, looking at the quality of the raw material and product that end up on consumer tables and promoting competitiveness between companies.
