Farnese dairyThe Farnese Zootecnica Cooperative was founded in 1989 by 15 dairy partners, currently known as the Farnese Dairy, and is now a branch of the Social Cooperative of Manciano. The dairy transforms around 800,000 liters of sheep’s milk every year, creating then 1,600 quintals of cheese and 400 quintals of ricotta with the help of its 6 employees.
It primarily produces fresh and aged pecorino, but makes fresh and semi-aged pecorino caciottas as well.
The Farnese Cooperative is within the PDO Tuscan Pecorino zone.
The passion of its producers, the constant vigilance of the consortium, the execution of thousands of quality control tests and finally the antique choice of passing down know-how from father to son culminate in the taste and flavor of tradition.
The diverse territories that make up Tuscany and neighboring Lazio region have a special relationship with Pecorino production: every zone takes advantage of its specific geographical and natural conditions and has a unique agricultural tradition, passed down through the typical production in local dairies.
